Cookie Butter Sheet Cake

It's Monday morning.
Are you ready for another week?
Probably not.
You should probably make this cookie butter sheet cake to make you feel better.
JK, I don't encourage emotional eating...even though I do it too...*grimace-emoji*.
Have you ever just taken a spoon to a jar of cookie butter though?
Funny story, I've never even heard of cookie until one day my uncle kept raving on about it (this was about 2 years ago maybe?). So my mom & I went to the store & saw 'cookie butter' so naturally we bought a jar (a large jar) to try some.
Let's just say...there was no self control involved with that jar. Gone.
Next time we went shopping guess what we found? That's right, cookie butter. But not just cookie butter, it was multiple jars of cookie butter on clearance & some were the 'crunchy' kind with the biscoff cookie chunks in it.
omg.
I remember taking it to my friends house because they've never tried it & I basically just devoured that too.
Then I learned my lesson.
I stopped buying cookie butter.
But then obviously I bought some more because I made this cake.
I've also learned to contain myself a little more since then...since I only have two little pieces of this cake & not the whole thing.
& that's my cookie butter story.
I hope it made your Monday morning a bit more tolerable & I encourage you to make this cake so it can make your whole week a bit more tolerable *winky-face emoji*.

oh also...I used brown-butter for the cake part *squinty-emoji*. It just makes everything sooooo much better BUT you don't have to use it because the true star in this is the cookie butter but yah knooowww I just had too. If you're too lazy to make brown butter just substitute it 1:1 ratio with oil.


BROWN BUTTER SHEET CAKE WITH WHIPPED COOKIE BUTTER BUTTERCREAM
INGREDIENTS
Cake
3 cup flour
2 cups milk
1/4 cup oil
½ cup butter, softened
½ cup browned butter, melted *optional* (you can replace with a 1:1 ratio of butter to oil)
1 ½ cups sugar
1 cup brown sugar
3 eggs
1 tbsp. vanilla
2 ½ tsp. baking powder
¾ tsp. salt
Buttercream
3 egg yolks
1/4 cup sugar
1/2 cup unsalted butter, softened
8 oz. cool whip
2 tsp. vanilla
1/4 cup cookie butter (you add more if you'd like)
DIRECTIONS
Buttercream
Begin with beating egg yolks & sugar, for buttercream, until it begins to thicken & turns a pale yellow color.
Place mixture over a double boiler & add in butter, stirring intermittently until mixture thickens even more.
It may get thinner & separate before it before it begins to thicken, so give it a few minutes. Make sure to give it enough time but continue to stir so it doesn't burn.
Set aside & let cool completely (overnight is best).
Beat in cool whip, vanilla & cookie butter until fully combined.
Brown Butter
In this recipe you need a total of 1 stick of browned butter so start by placing it in a light colored pot on medium heat.
Whisk continuously until you see the brown speckles of butter forming on the bottom of your pan & it begins to smell nutty.
Remove from heat & allow to cool a little before adding to batter.
Cake
Preheat oven to 350F & grease pan 9x13" pan.
Whisk together flour, baking powder & salt in medium bowl and set aside.
On medium speed, beat together softened butter & sugars.
Once combined, add in oil & melted brown butter.
Once that's combined, add in eggs & vanilla.
Alternate adding in milk & dry ingredients while beating on low-medium speed. Beat until just combined.
Fill pan about half way & bake for about 35-45 minutes.
Cake is done either when the sides pull away from edge of pan, you poke it & it springs back or toothpick comes out without liquid batter.
Allow cake to cool completely & spread cookie butter buttercream on top.
If you're feeling snazzy you can drizzle some melted cookie butter on top & top with crushed biscoff cookies.
