Pumpkin Chocolate Chip Cookies

I don't know what it is about this time of the year but I LOVE baking! Something about the coziness of fresh baked goods when the cold is starting to set in. I love that something as simple as cookies can bring people together and these did just that. With that said, I think nothing beats a classic chocolate chip cookie but these are definitely a nice change for the fall time.
There are so many recipes out there so honestly I didn't bother coming up with my own lol. I got the recipe from Chelsea's Messy Apron and I followed it exactly. I really hate when I try a new recipe and either it's too complicated, it doesn't turn out anything like the picture, or it just asks for ingredients I don't like to use. But these, my friend, look great, taste great and were very simple to make . The only thing I did different was use olive oil instead of vegetable oil and that was only because that was all I had at home. I used the amount of pumpkin spice that the recipe called for and it wasn't a strong flavor at all so if you like more of kick then feel free to add more spice! The recipe says to refrigerate for 1-10 hours for a more bakery style cookie, I refrigerated these for only like 45 minutes and they still came out very large and puffy. I used a heaping tablespoon of batter for one cookie and I only put up to six on one tray. I got 16 cookies from this recipe but a few were a little too big so you should get 18 good sized cookies! I only had two left at the end of the night and I just covered them with plastic so I don't know how they are refrigerated but mine were just as good, if not better, the next morning.

I've also been practicing my photography skills. I bought a camera in March and honestly I still don't really know how to use it properly. I don't know if you can tell but the pictures from before I baked the cookies are a little different than the pictures after I baked the cookies. I keep researching how to use the settings and using different lighting for different purposes and I feel like I may be getting somewhere with this camera now lol. If you have any advice, I own a Canon Rebel T6 and I would really appreciate all the help I can get!
