Chicken & Veggie Soup - Whole30

Hello beautiful humans.
I think this is my only successful soup.... Lol, I usually just steal soup from my mom. I’m a great wife, I know.
So if you read my last post you’d know that I’m doing whole30 for the month of January, which means I actually have to cook now. I work three 12hr shifts a week and I don’t like to cook during those three days so I thought I’d make something that would last a few days, such as soupppp. I LOVE soup and Narcis is not the biggest fan, soooo more for me! I do try to make things that he will like as well, but he’s not doing whole30 with me so he doesn’t always want what I’m eating.
So to answer your question, whole30 is going pretty well, although we are still only in week 1. The worst part really is the coffee. I can make it with almond milk or coconut milk or even drink it black but when I have my coffee in the morning it's more like I'm enjoying some 'me time' lol. So when I'm not enjoying my coffee I feel like everything is ruined! Hahah but I know there are bigger problems in life than drinking black coffee...Other than that, I'm actually doing pretty good on this whole thing, much better than I thought I would. I think a big thing for me so far is having something ready to go in the fridge because every once in a while I get a little hangry...& I make poor decisions when I'm hangry soooo yeah.
We're just going to have to keep the fridge stocked for these next 30 days!

CHICKEN POTATO SOUP
Serves: 7-8 | Prep Time: 10 min. | Cook Time: 60 min. | Total Time: 70 min.
INGREDIENTS:
2 tbsp. cooking fat (I used Avocado oil)
1 large Sweet Onion, diced
1 pack of Cut-up Chicken with bone and skin (thigh, breast, wing, drumstick)
10 cups Water
3 Red Potatoes, chopped
3 Carrots, chopped
4 stalks Celery, chopped
1 handful Parsley, chopped
2 handfuls Kale, chopped
2 tsp. minced garlic
1 medium rosemary leaf
1-2 tsp. Salt, to taste
1/2 tsp. Pepper
1/2 tsp. Cajun
1 tsp. Paprika
2 tsp. Mrs. Dash
1/2 tsp. Red Pepper Flakes *optional
INSTRUCTIONS:
In large pot, on medium heat, brown onions and chicken in cooking fat of choice.
Season with only half of spices.
Once browned, add only 5 cups of water to pot and let simmer on medium heat while chopping the other veggies.
Roughly chop potatoes, celery and carrots, and parsley and add into pot.
Add in garlic, the other half of water, and spices and let simmer for about an hour.
Remove rosemary leaf and chicken from soup. Shred chicken off the bone and return to soup.
Add in kale and let soften for a couple minutes before serving.
LOVE NOTES
If you don't mind eating chicken off the bone you don't have to shred it.
If you want to use chicken without the bone I would suggest using chicken broth instead of water.
If you're not dairy-free or doing whole30 like me, you could add some sour cream to the soup or just a dollop on top.
If you have different veggies or potatoes at home and don't want to run to the store, you could totally add it into these types of soups. You can also add more potatoes than I did. As long as you get a good broth you can add whatever you like to it; best part about soups!

I'm excited to try some different meals out in these next few weeks and I just bought some more whole30 friendly sauces so I will let you know what I think once I've tried them!
