Heeeeey guuuuuuyyyysss,

It's been a minute...again.

Real talk, I love baking, I love taking photos & I love sharing them with you all but it's easier said than done. There's so many steps in between & it's so hard to keep up with posting. I wish I could just bake & take photos and *poof* they're up !

But that doesn't happen, obvvvvvvsss.

BUTTTT on the bright side, guess who's going to day shift next monthhhhh *hand-raising, blonde female emoji*

Yup, you got it, that'd be me. I have high hopes of not being a zombie anymore. Somewhere deep down I really am hoping to wake up at 6am everyday, workout, get some work down, be consistent with posting, eat healthier, read more... yeah I have high hopes. I'm sure I'll be disappointed but a girl can dream right?!

Anyways, onto the topic of discussion.

I LOVE banana bread but my husband doesn't. He says the banana flavor is too strong so I made a carrot bread, which is the exact same extra MOIST texture, but without the banana flavor.

It's amazing. period.

Don't forget to top it with the delicious cream cheese spread which you can find down below.

CARROT BREAD

INGREDIENTS

Bread

  • 2 eggs

  • 2 cups all purpose flour

  • 1 cups carrots, shredded

  • 1/2 cup granulated sugar

  • 1/2 cups brown sugar

  • 1/4 cup walnuts, ground

  • 1/4 cup oil

  • 3/4 cup buttermilk

  • 2 tsp vanilla

  • 1 tsp baking soda

  • 2 tsp cinnamon

  • 1/2 tsp salt

Spread

  • 4 oz. cream cheese

  • 1/4 cup sugar

  • 1 tsp vanilla

  • 2-3 tbsp. milk, until desired consistency.

DIRECTIONS

  1. Preheat oven to 350°F. Spray bread pan with non-stick baking spray, I used a generous amount of PAM and it didn't stick at all. Set aside.

  2. Shred your carrots (I did this by hand with a grater since it only took about three carrots).

  3. Combine flour, baking soda, salt, & cinnamon & set aside.

  4. In a medium bowl, beat together eggs & sugar.

  5. Add oil, buttermilk and vanilla & beat with hand mixer until well combined.

  6. Add in all dry ingredient and mix until combined.

  7. Add in carrots & walnuts.

  8. Pour dough into pan and spread evenly.

  9. Bake for ~45 minutes.

  10. In a small bowl, soften cream cheese and beat until smooth. Add in sugar, milk & vanilla.

  11. Store in airtight container.

So that is how easy this carrot bread isssss! It's pretty similar to my apple bread from last fall, which you should also try because it's amazinggggg. Really though, this is so simple & quick & I know everyone loves carrot cake so to make yourself feel better for eating it for breakfast, just turn it into a bread *winky-face, winky-face, winky-face*.
