Peach, Raspberry, Brown Butter Crisp

Crisp. Pie. Galette. Cobbler.
Who even knows the difference anymore?! Basically fruuuuittt with a delicious crunch. amiright?
Anywhoooo, this is a crisp, in case you were wondering. It's fruit with a streusel on top. This one however, is not just any streusel. It's the most wonderful brown-butter streusel over a delicious combination of white peaches & raspberries mixed with vanilla beans & a wee bit of bourbon.
You know you want some.
Especially after I tell you how easy it is to make.
I won't take all the credit though. Basically every recipe you can imagine is already invented soooo this recipe was inspired by miss Sally from Sally's Baking Addiction. Pretty sure everything she makes is perfection so yeah...
Hers was made with peaches & blueberries & I tried both hers & mine, both being absolutely delicious. If you like it a bit more tart/sour go with the raspberries, if you don't then go with the blueberries. I love both.
Honestly you can make this with any fruit. You bet I'll be making this with apples as soon as the first leaf falls off a tree !
Anyway, I'll be honest, sometimes I find it hard making dessert in the summertime. Not because I don't want dessert but because I feel like I have little inspiration in the summer.
I'm definitely one of those obsessed with fall & winter flavors type of people, so in the fall & winter I feel like I don't have enough days in the week to make everything I want but in the summer I just want to make berry filled pie/crisp/galette/cobbler, lol.
Like I don't even want cookies, brownies, cake, etc. in the summer. Just a berry-ful dessert that I can throw some vanilla ice cream on top of.

What do you guys think of my photography skills?! Have I come a long way? Just take a look at one of these first few posts I did & then answer that, lol. I mean I'm not perfect, & no where near, but I think I've made some decent progress & also, both photos are with the same camera & lense ! craaazzyyyy


It may look a little like someone threw up in your plate but it'll be the best throw up you'll ever eat ! That's a promise :)

BROWN BUTTER WHITE PEACH RASPBERRY CRISP
INGREDIENTS
Filling
3 medium peaches, chopped
1 cups raspberries
1/4 cup flour
1/4 cup sugar
1-2 tsp vanilla *I did 2 tsp of vanilla bean paste because I'm an addict.
2-3 tbsp. bourbon
Streusel
1/2 cup unsalted butter
2/3 cup flour
1/2 cup brown sugar
1 tsp cinnamon
1/2 cup walnuts, ground (toasted pecans would be incredibleee too)
1/2 cup oatmeal *optional, increase flour without this.
DIRECTIONS
Preheat oven to 350F.
Brown your butter in a sauce pan/skillet: melt it & continue stirring over low-medium heat until it begins to brown & the smell turns nutty.
Once browned, remove from heat & pour into a jar/container & allow to cool.
Meanwhile, whisk together dry ingredients for streusel & set aside.
Mix together all ingredients for filling & spread evenly in a lightly greased baking dish. I used two 8" pie dishes. Feel free to use any skillet/pie dish.
Pour butter over dry ingredients & mix with a spoon until it crumbles. Add more flour if mixture is too wet to crumble with your hands.
Spread evenly over filling & top with a few more raspberries.
Bake for ~40 minutes.
If you're using multiple smaller dishes, they will bake quicker & a larger single dish may take up to an hour. Wait for the streusel to brown & the filling to bubble out on the sides.
Top with your favorite vanilla ice cream & tag #bakewithb in your photos <3.

Would love to know if you guys made this & what else you guys would want to see on here! I did a poll on Instagram today & I guess the consensus was "savory > sweet", "baked > no-baked", "fruity > not fruity", "don't care > healthy-ish", & "behind the scenes > final product". I'm not much of a cook, mostly because I was never that good at it & I feel like it requires too many ingredients that are 'time sensitive', as in, they will go bad if I don't make this today. But I do LOVE making things with dough, lol... so we'll see about that 'savory' thought. So that's all I'm gonna blab about today, go bless someone with this delicious crisp & until next time,
