No-Bake Truffles (Salam de Biscuiti)

Friends.

If you're European you've probably had these. I thought they were specific to Romanians but I'm pretty sure a lot of other cultures have a similar type of dessert.

So for those who have no idea what I'm talking about, this is a super duper easy, delicious, nostalgic for most, chocolate dessert that I turned into a truffle.

The first time we made these was like five years ago at my engagement party. I wanted cake pops & of course my mother wanted something more romanian so we found a happy medium. &&&& let me tell you! People went crazy over these. They were the first dessert to go & people found my secret stash & ate those too!

With such a big hit, I have no idea why we haven't made them again until now. I recently made these as cake pops again with my mom for a baby shower, but I prefer them as truffles. The difference being, there's no stick lol & in cake pop the outer chocolate is a little more firm than the truffle. Plus there's no actuaaaaaalllll cake in there soooo it's technically a truffle lol.

It's kinda like a no-bake brownie, where you can add whatever fill-ins your little heart desires, but I like to keep it simple !

Yummm. Wish I had some more of these !

NO-BAKE (SALAM DE BISCUITI) TRUFFLES

INGREDIENTS

1 cup milk

1 cup water

1 stick unsalted butter, softened

1 cup sugar

1/2 cup cocoa powder

1/2 tbsp rum

1/2 tbsp instant coffee/espresso powder

3 cups animal crackers, crushed

1-2 cups semi-sweet chocolate (amount depends on how big you make your truffles)

1-2 tbsp oil (if you're making cake pops, omit oil)

Animal Cracker crumbs

DIRECTIONS

  • Boil milk, water & sugar for about 10 minutes.

  • Meanwhile, crush animal crackers into small chunks, no bigger than a peanut.

  • Then add butter, cocoa, rum & coffee to boiling mixture, whisking intermittently while boiling for 5-10 minutes.

  • Remove from heat & stir in animal crackers. Mixture should have gotten a little bit thicker & will thicken more once it's cooled.

  • Allow to cool completely before rolling into balls.

  • Once rolled, freeze for about 30 minutes so they're easier to work with.

  • Melt chocolate & oil together & dip balls into chocolate. Top with some extra animal cracker crumbs & refrigerate.

  • Good for about a week in the fridge.
